Chicken with roquefort

Ingredient(s) :
  • 1 free-range chicken of around 1,6kg (3.53lb)
  • 60g Roquefort cheese
  • 10cl white wine
  • 1 shallot
  • 20cl creme fraiche
  • 8 chicories
  • 50g butter
Receipt :

Brown the chicken cut into pieces with the shallot cut finely in oil and butter. Water with white wine. Cook around ½ hour and take out the wings a few minutes. Keep the whole hot. Simmer 20cl creme fraiche and 60g (0,13lb) Roquefort to reduce.
Cut the chicories in julienne lengthwise, and steam with butter.

Strain and add the whole in the Roquefort sauce.

Top the chicken pieces with the sauce and serve very hot.
