The fouace: a brioche with orange blossom

Ingredient(s) :
  • 200g (0.44lb) butter at ambient temperature
  • 5cl orange blossom water
  • 1kg (2.2lb) leaven (ask your baker)
  • 1 teaspoon salt
  • 250g powdered sugar
  • 20cl full-cream milk
Receipt :

Mix the leaven, the eggs, the milk, the orange blossom and salt. Knead the mixture until you get a soft and elastic mixture.

Then, blend it with sugar and knead. When the mixture is smooth, add the butter and mix. The mixture must be at ambient temperature.

When the mixture is three times bigger, make a ball and shape it as a crown. Make 1 or 2 crowns, and leave aside. Brown them with egg yolk and put in the oven at 220°C - 428F - during 5minutes, then cook 30 minutes at 170°C - 338F.
