Roquefort cheese should always be wrapped when stored, either in its original packaging or in aluminium foil. This will help keep it moist and creamy.
The cheese should be stored in the lower part of the refrigerator.
A damp and cool cellar would of course provide the perfect storage conditions.
Abrupt changes in temperature should be avoided.
Roquefort cheese should be brought to room temperature – just like a good wine – at least one hour before eating.
It will then offer maximum moisture, flavour and texture.
