Beef nems with Roquefort

160g (0.35lb) Roquefort cheese transformed in 8 sticks
400g (0.88lb) rum steck transformed in sticks
2 carrots
100g (0.22lb) beansprout
2 leaves of mint
8 rice papers
2 spoonfuls nuoc-mâm
2 spoonfuls sesame oil
2 tablespoons peanut oil
Prepare a frying bath

Receipt :

1. Peel and grate the carrots. Fry the meat for 3 minutes in hot peanut oil.
2. Then, in a mixing bowl, pour it with the carrots, the beansprout, vinegar, sesame oil and nuoc-mâm. Mix.
3. Soak the rice papers in cold water during 3 minutes. Place 1/8 forcemeat and 1 stick of Roquefort down each rice paper.
4. Roll to the half and fold up each edge to the centre. Finish rolling the nems. Plunge them into the hot frying for 5 minutes. Serve the nems with leaves of mint.
