Beef Tournedos, Roquefort crumble

50g Roquefort cheese
4 tournedos
5cl Cognac
2 tablespoons dehydrated fond de veau
50g flour
40g butter
2 tablespoon olive oil
pepper

Receipt :

1. Mix the flour with the Roquefort and 30g (0,07lb) butter. Use your hands to rub it in. Continue until the mixture is lumpy. Put it in a cool place.
2. Put pepper on the tournedos, and fry each side around 4 minutes. Take the dripping off the pan, pour the Cognac and leave it reduce. Add the fond de veau, and keep it in a hot place.
3. Place the tournedos in a oven dish. Cover with the crumble and press on top. Put in the oven during around 4 minutes under the grill. Serve immediately with the sauce.
Suggestion: serve with asparagus.
