Diamond-shaped tortilla with Roquefort

100gr. Roquefort cheese
400g (0.88lb) cooked potatoes (Roseval or Charlotte)
1 onion
2 cloves of garlic
1 tablespoon minced parsley
5 eggs
2 tablespoons olive oil
pepper

Receipt :

1. Cut the potatoes into thick rounds. Peel the onion and the garlic. Then, slice thinly. In a pan, sweat the onion in olive oil for 10 minutes.
2. Add the minced garlic and the potatoes. Leave cooking on a high heat 5 minutes more.
3. In a container, whip the eggs with the parsley, the Roquefort cut into pieces, and pepper. Pour into the pan, and mix during 2 minutes. Then, leave cooking on a medium heat during 5 minutes.
4. Turn over the tortilla using a plate and cook the other side for 5 minutes. Slide the tortilla onto a dish, make diamond-shaped portions and serve.
