Green roquefort quiche

80 gr. of Roquefort
1 roll of short crust pastry
100 gr. of fresh spinach
2 handfuls of rocket
30 gr. of butter
200 ml. of single cream
100 ml. of milk
2 eggs

Receipt :

Wilt the spinach in a frying pan for a few seconds in half of the butter ans wilt the rocket in a sauce-pan with the remaining butter. Once cooked, remove the saucepan from the beat, add the cream, milk and some salt ans pepper. Mix the remaining ingredients with Roquefort together, then add the eggs. Spread the short crust pastry in a pie dish or in tartlet dish. Spread the melted spinach in the base, pour the mixture over the top ans the bake for 20 mins in an oven preheated to gas 6/7 - 200°C/400°F. Serve hot or cold with salad.
