Roquefort flan

For 4:

¼ litre milk

4 eggs

50 gr. flour

200 gr. Roquefort cheese

15 gr. butter

Salt and pepper

¼ litre of thick Béchamel sauce

Receipt :

In a mixing bowl, mash 100 gr. of Roquefort cheese with a fork. Mix with flour. Then carefully incorporate eggs one at a time. Add salt and pepper. Gradually add boiled milk and pour the preparation into the buttered flan tin. Cook in a bain-marie. Turn out of the flan tin, cover with Béchamel sauce and sprinkle with crumbs of Roquefort cheese.
