250 gr. Roquefort cheese

1 endive per person

125 gr. butter

125 gr. almonds

Receipt :

Wash endives whole and discard outer leaves. Slice endives in half lengthways and cut out heart.

Replace heart by a homogenous mixture of Roquefort cheese and cold butter. Served decorated with almonds.
